如果将咸鱼细分,又有霉香和实肉的差别。霉香是在加盐腌制前和腌制过程故意让鱼轻度发酵变质,使成品咸鱼肉质松化,产生奇香异味,俗谓“肉腐”;实肉是以新鲜鱼类腌制,成品咸鱼肉质结实,咸鲜耐嚼。这两种风味的咸鱼虽然各有特点,但霉香咸鱼因其制作考究,味道香浓独特,相比之下更加出名。煎霉香咸鱼的时候,有时隔着一两条街都能闻到那种独特的香味。

霉香咸鱼是不是就是广式菜馆里的 “咸鱼豆腐煲” 里面的咸鱼? 那咸鱼是有股奇香,但又类似于腐臭。和大量葱花一起烧豆腐, 是蛮好吃的。
