extra light olive oil 主要是煎(sautee) 的可能更健康。air fry 也行我想。
Olive oil has similar smoke point like lard... Actually it is enough for most "healthy" cooking like sautee. Deep fry is not healthy no matter what oil you use

葡萄籽油也可以,170、180度的样子。
橄榄油extra virgin肯定不行,filtered烟点能高一点,但印象中没有葡萄籽油高。
还有一种适合炒菜的其实是芥花籽油,但是芥花籽油都是转基因的,所以,见仁见智...
另外,觉得不香应该是因为filter过。初榨橄榄油很香,但是那些成分也导致了烟点过低,不适合用于爆炒。
合适,不是最高。另外还要考虑油酸比例。综合下来,canola oil比较适合日常炒菜。

costco有一款是专门用来炒菜的橄榄油的。
地中海人有拿橄榄油炒菜的,哪种就不知道了。非我族类,我不吃他们的油,挺便宜的倒是,比花生油还便宜。Costco的花生油不香,可能生炸的,老中的都是烤熟炸的,香。
这个文章的结论有点似是而非。转基因先不说,可以买有机的规避,就是贵不少。canola oil算是植物油中omega3含量高的了,包括文中推荐的橄榄油,omega3比例也不高,我记得还不如canola。还有炒菜需要烟点相对高的油,文里推荐的extra virgin olive oil烟点过低,不适合炒菜。要用橄榄油炒,也得是精炼过的。记得当时我research的结论是用来炒菜的话,几乎只能是refined的油。
