Empty cookware can also exceed this temperature upon heating.

TEFLON是DuPont公司所产的不粘涂料PTEF的牌子, 也代表它的生产方式.
PTEF本身不致癌,致癌的是传统生产过程中所需要的PFOA(全氟辛酸).
这是用来催化乳化效应.
现在有厂家已经开发出不需PFOA的生产PTEF的过程.
DuPont 还没有能做到,但保证将来会(2015年之后)
新一代的不粘锅许多牌子用了不用PFOA的PTEF ("PFOA free"), 包括下面的系列:

铁锅想不粘很容易,先把油热一下,不用太热,7、80度就行,再端着离开火一小会儿,转一转油,再放到火上,煎蛋、煎鱼,或者炒什么,都不粘。
I bought a Greenpan set from Costco last month. So far so good. Healthy ceramic non-stick, of course, I only use middle fire most of the time.
