据说一般讲,精制食用植物油的精制过程要用很多化学物质多次参与精制过程,精制橄榄油(Extra Light Olive Oil)是不是也是如此?食用精制橄榄油有没有健康的因素要考虑?

特级初榨橄榄油(Extra Virgin OLive Oil)据说是纯物理压榨的,是不是更健康?没有化学物质参与制作过程?

但对于我们华裔经常炒菜的饮食习惯,特级初榨橄榄油的烟点比精制橄榄油低,所以有些矛盾。

另外说一个如何辨别特级初榨橄榄油好坏的方法,将一小勺特级初榨橄榄油直接喝进去,好的特级初榨橄榄油会在嗓子里有点刺激的味觉。不太好的特级初榨橄榄油就没有这种感觉。精制橄榄油也没有这种刺激的味觉。

这2个都吃过,觉得第2个好很多,是有机的价格也贵。第1个是For frying and baking,怀疑里头添加了

棕榈油,用它来炸东西也没有第2个炸出来的好吃,但是它的烟点确实高,久炸也不容易变色。

我家经常买的是Berio Extra Virgin Pure Olive Oil,觉得炒菜比第1个好吃,但那个类似橄榄的味道比第2个小很多。

上面两个油价格基本一样,所以这个有机特级初榨橄榄油非常上算。在其它地方很难看到有机的橄榄油。

有机特级初榨橄榄油烟点有点低,400度,非常接近炒菜的温度200℃(392度)。但不是很肯定是不是适合炒菜。试着炒菜过,似乎没有冒烟的感觉。

油温不是太高的话橄榄油行的,牛油果油贵很多,你的第二个,我注意过每单位价格是Costco所有橄榄中最好无疑。

并没有贵很多。 sams牛油果一升8刀, 橄榄油差不多, 葡萄籽更便宜一点, 不好买

costco可能是10刀, 差10%最多了。

就是炒菜没油香, 橄榄油自己还有怪味。 

我家一年用6-7升, 觉得少用是正道。

如果为了健康,橄榄油最好不要过于加热炒菜。可以试试习惯蒸蔬菜,然后用橄榄油和自己的调味汁拌一下,蔬菜的营养成分也不会破坏
