不柴,很好吃。看起来很柴是因为煮好后凉了一晚,还没来得及放冰箱。
味道很好,很香。先是用炒的(盐+花椒+孜然粒)腌制一晚再用黄豆酱腌一天,最后用八角桂皮丁香香叶煮四五十分钟。

這種肌蛋白 的光效應 上面不能有牛油 有的話就看不到了
炒的去油 黃豆醬也去油 香料都是去油的 看起來會柴
肌蛋白要新鮮的才能維持結構 不新鮮就降解了
相對來說 魚油的光學效應沒那麼大(不凝固)
當然還得是新鮮的魚 肌蛋白結構才能留住
