这个涂层会不会掉啊?能放洗碗机吗?我也是用analon的那个版锅,但是不到一年就不行了,涂层掉的很厉害。而且现在涨价了涨的很厉害,以前才30?现在好象要5,60一个。
这是陶瓷涂层,底下是铸铁。不能放洗碗机的。

就是不沾的涂层,很好清理的。只是陶瓷涂层最好不要骤冷骤热,也不要用金属剐蹭。

不沾锅涂层都差不多,最重要是千万别用洗洁精洗,热水就够了。洗洁精的话没两三年涂层就废了。
好象没听说过不能用洗洁精洗啊,只听说不能冷热交替,然后不能用金属的harsh的碰表面。
卖锅的当然不会说,warranty 里只说dishwasher safe, 450F/500F safe。但没有detergent safe。

比纯铸铁轻得多,性能跟铸铁锅差不多,维护好就不沾。维护很容易的,每次用完拿水冲干净,拿paper towel沾植物油擦一层就行了。涂层锅不管什么材料,都会掉渣到食物里,我感觉有点恶心。
但是铸铁锅就算了,我就图不粘锅不用放油也不粘。
我用all clad不锈钢锅,练好了手艺,就不粘了,pancakes,fried eggs,scrambled eggs,韭菜鸡蛋饼,都没问题。

我也有all clad copper core还是粘呀。请教一下,怎么才能变成不粘锅?
这个我也看过,太小了,煎个蛋还行,炒蔬菜根本放不开。
我不太会描述,大致就是先用中小火热锅,但不要太热,然后放一小层油(冒烟或闻到很强的油味,就是热过头了),再放东西。ideal的温度是,油一放进去就能自动摊开,匀满锅底。
另一个方法是,小火热一小会儿锅,放butter,melt,再加点油,然后放东西。如果butter变brown就是锅太热了,火得再小点。
把东西放进去以后,就可以根据需要调整火候了。
如果没有淀粉类的可能还可以,但是比如炒菜的肉用了淀粉marinate的话,绝对会粘的。我只有炒蔬菜这些才用。
本来种草了,去看了一下的确说oven safe 300F,这个温度炒菜也不安全,stir fry的温度一般是350-400F
淀粉类真的也可以不粘锅的,我经常做pancakes,French toast,还有加不少淀粉的鸡蛋饼/肉饼。
但是炒饭会粘,大家有推荐炒饭不粘的方法吗?

没有那么严格。锅的两个把手是包塑料的,进烤箱自然不能有那么高的温度。炒菜的时候烧锅底,多那几十度不是事。但注意火不要太大了,我的锅把手就烧黑了一小块。
炒饭我也用小火。隔夜的米饭先在微波炉里加热。米饭入锅后,马上加点butter融化,就不粘,口感也更好。
为啥要一丁点油都不放呀?olive oil,专门cooking/sauté用的那种,一点味道都没有。我看意大利餐馆里,都是拿面包直接蘸olive oil吃,应该不会不健康吧。
我也不是倒满整个锅底,只是往热好的锅里倒一点,spread。煎豆腐也不粘。
all clad不粘锅有500的。我就买这个,比其他不粘锅寿命也长点。

深度同意,我有一摞lodge的铸铁锅,都已经养成不粘锅了,用起来太方便了。我不颠锅,只是刷锅的话,倒不觉得很重,完全可以handle。
我放一点油,主要是煎蛋用,煎的差不多了,再加米饭。
我买了这款。炒蔬菜没有问题,就是底部面积小,用电的炉子加热太慢了。如果是平底锅,煎鸡蛋,煎饼很好用。 不粘锅,最好用硅胶的铲子。哪怕是木头的都容易划伤。

每个人习惯不一样,我就不喜欢橄榄油黄油那些味儿,也不喜欢油大的菜。我家每天煎蛋都要做六七个,不放油当然更健康了。其他的菜,不锈钢锅和不粘锅需要的油都不是一个数量级的,别人可能不介意不觉得有差别,但是不粘锅比较适合我家饮食需求。
