西西里的气候比意大利本土更为温暖,蔬果不但生长快速而且鲜嫩多汁。就拿蕃茄来说,如此鲜红浑圆,你一看就明白此地气候所带来的影响。而且,岛上许多土地都曾经过火山灰一再地覆盖,土壤中含丰富的矿物质,蔬果无不丰茂。此外,西西里岛拥有绵长的海岸线,可以想象得到市场里头或者烹饪的食材中一定会充满了鱼、虾、海鲜。令人最满意的是,在餐厅里端到你桌前的必定是今天才捞上岸的新鲜鱼货。
至于历史积淀,数千年来,由于特殊的地缘关系引来了众多的殖民者和统治者,塑造出西西里曲折奇特的历史,每一个外来者都曾在这岛上留下些许无法磨灭的印记,当然,也深深地影响到西西里的饮食风格和饮食传统。相较于北边的意大利本土,西西里的烹调显得有股浓浓的异国风。同样是地中海型气候,西西里的烹调却特别喜欢用辣和各式各样的香料:迷迭香、茴香、薄荷叶、罗勒、杏仁、奥勒岗叶(Origano)等等,这正是阿拉伯人的习惯。当地人酷爱食用圆茄(英文也叫Eggplants,但此地的茄子圆滚滚的,和我们常见的细而长的茄子相当不同 ),圆茄是种地中海沿岸常见的蔬菜,是阿拉伯人首先将之纳入日常的食谱之中;还有,阿拉伯人也是首先用铁叉串肉烧烤的民族,那模样就像我们在路边常看到的“串烤里脊”。此外,不像北边的意大利本土,西西里料理很少用奶油、牛油调味,相反的,这里人大量使用蕃茄和橄榄油。橄榄油是西西里烹调的圣品,随时、随处皆用得到。西西里拥有质量极佳的橄榄树,这也是由阿拉伯人自北非带过来的,当地人称之为 La Saracena的橄榄树,不论是油的产量及油的质地,皆远胜过原来那些来自希腊的橄榄树。

德国超市目前全是 西西里的柑橘, 很甜很甜.
不亚于美国的南部的柑橘.
