Lot of posts on Quora basically asking this same question. In summary:
There are some serious challenges in trying to make such a claim:
In most legal systems you cannot actually sue sovereign nations under the doctrine of state immunity. Sovereign states are immune to claims in the courts of other countries (although you could always try going to China and suing there).

There seems to be very little evidence that China acutally did anything wrong (despite what Fox News claims). Chinese CDDC reported the outbreak to WHO pretty much as soon as it worked out what was happening, and it took stronger steps to contain the virus than just about any other country except for perhaps Singapore and South Korea. So, what exactly is the fault that the lawsuit would plead?
Causation. Even if you accept that China was as careless as you like, there have been a dozen or so intervening actors in relation to any vectors of transmission. It may have originated in China, but it spread through literally thousands of people, countries, places before it hits later victims - some of those will have taken care, but others will have been careless. It is impossible to see how the chain of causation survives. After a while it is just a virus that is going around. Suggesting that China should have been able to stop it all at the source, and thus it is to blame (but not blame subsequent countries or private organisations which it spread through) is inconsistent and illogical.
